Happy Friday everyone! Today I wanted to share this zapiekanka that I made recently which is a bit different from the food I usually post. I’m actually Polish and zapiekanki are super popular as street food in Poland. I remember having the most delicious ones when I visited Poland! My mom makes them for us sometimes at home and I decided to recreate it at school, but make it dairy-free. There are lots of different options for toppings, but mushrooms, cheese, and ketchup are definitely the classic option.⁣

dEATs:⁣
-Sauté some mushrooms with your seasoning of choice⁣
-Cut a French baguette in half and butter it⁣
-Place your mushrooms, cheese (I used Trader Joe’s dairy-free mozzarella style shreds that are made with cashew milk), and a drizzle of ketchup on top of the bread⁣
-Bake at 400 degrees F, until your cheese is melted as desired (I personally don’t like the texture of this dairy-free cheese if I let it melt too long, so that is why the cheese doesn’t look fully melted)⁣
-I topped mine with green onions!⁣
