Who loves asparagus? 🙋🏼‍♀️ I adore it. It’s in season now here in New Zealand, and I always indulge. This one turned out amazing!

♡ Vic’s Cheesy Asparagus Muffin Bread ♡

As always I have included two cooking methods for your 😉 When you make my recipes I want it to be a pleasure NOT a chore. Don’t forget to share your own with me please, I love seeing them all😊

What you need👇

🔸️22g rolled oats @harrywaysnz are my favourite. 
🔸️2 tbsp 99% fat free yoghurt.
🔸️1 tbsp warm water.
🔸️1 medium egg.
🔸️Seasoning to taste, ¼ tsp of lemon pepper and garlic salt I always use.
🔸️3 pieces of asparagus cut to fit your baking pan.
🔸️1 lite laughing cow triangle.
🔸️¼ tsp black sesame seeds optional. 

What to do👇
Preheat the air fryer to 180°. Combine all the dry ingredients together in a small bowl. Add the egg, water and yoghurt, mix until well combined. Pour into a tuna tin (180g), which is the perfect size, or simply use a ramekin. Press a cheese triangle into the middle of the batter, top with asparagus pieces. Bake for 18-20 minutes or when a skewer comes out clean. 

I prefer baking mine, I like the crispy edges. But here is an alternative cooking method: 🔶️ Rinse out a cup, mug or ramekin with water to prevent sticking. Follow the above steps with the mixture and Microwave for 2 minutes (depending on your microwave). It’s cooked when a skewer comes out clean.
Serve one but I always make 3 at a time 😉
