Who likes easy dinners? I certainly do 🙋🏼‍♀️
♡Vic’s Sweet ‘n’ Sour♡ (with peaches) don’t knock it until you’ve tried it 😉 Inspired by @jamieoliver to use tinned peaches instead of what I usually use pineapple. 

💚💙💜 4 Serves 4 large portions. 

It’s ‘The Magic Pot’ time again (my slow cooker) I’ve been making this for years now, it’s so simple and easy to throw together.  A hearty slow-cooked healthy meal filled with an infusion of Chinese flavours. I severed mine with quinoa, for modern twist, ZERO on 💜

What you need.
🔸️4 medium skinless chicken thighs. I used frozen.  Yes! you can pop these in straight from the freezer 🔶️
🔸️1 large roughly chopped onion.
🔸️1 tin of sliced peaches in juice drained.
🔸️1 tbsp of ketchup.
🔸️2 medium carrots chopped.
🔸️½ cup soya sauce.
🔸️¼ cup red wine vinegar.
🔸️½ cup water.
🔸️1 tbsp sugar free maple syrup. 
🔸️2 star anise or 1 tsp powdered. 
🔸️1 tsp pumpkin pie mix. Get my recipe here
🔸️1 heaped tbsp of crushed ginger and garlic. 
🔸️1 whole fresh red chilli 🌶
🔸️Seasoning to taste. 
🔶️Amend the spices to suit yourself. 

Veg – ½ bunch of asparagus, ¼ head of savoy cabbage (shredded) You can use any, frozen works well too.

What to do.
Preheat your slow cooker to high or low. Place everything in the pot except the peaches, cabbage and asparagus, give it a stir, place on the lid. Leave and let all the flavours infuse. Cook on low 8 hours or high 4 hours.
20 minutes before serving, add the remaining ingredients and cover with the chicken and sauce. At this stage you can thicken with cornflour,  I choose not too.
