What did you have for breakfast today?
♡Vic’s PBJ no-bake Cheesecake Jars♡ (Peanut Butter and Jam/jelly) 💜 ZERO 💙 6 💚 6 each jar.
Love making these jars ready to go! Prepared this American classic combination before I went to bed. Full of protein, healthy oats and naturally sweetened with fresh dates.
What a delightful treat to wake up to this morning 😋
For the base layer 👇
🔸️1cup of oats. I use @harrawaysnz wholegrain, I find these more flavoursome for this recipe.
🔸️5 -6 medjool dates pitted. Alternatively you can use sugar free maple syrup. Enough until it comes away from the sides when processed, it will have a slightly different texture and taste.
🔸️1 tbsp of warm water.
🔸️ 2 cups / 500g light cottage cheese. Processed with
🔸️ 1½ tbsp of sugar free maple syrup (or sweetener of choice).
🔸️ 2 tbsp PB2 powdered peanut butter.
🔸️ 1 tbsp PB2, powdered peanut butter made into a paste with water.
🔸️ 1 cup of frozen/ fresh strawberries. I used @countdown_nz frozen.
For fancy decorations👇
🔸️ Drizzled with more PB2. Topped with freshly sliced strawberries and fresh mint. Scattered with a few roughly chopped peanuts. Amend the smart points accordingly.
What to do 👇
Roughly process the oats and dates. (I used my Nutribullet). Add the water until it comes together. Divide into the bottom of 4 glass jars (300mls 1½ cup capacity). Top with the strawberry jam, followed by the cheesecake layer, and finally peanut butter and seal.
Easy peasy 😉 🔶️ALWAYS taste test to make sure it’s sweet enough 🔶️
Refrigerate for 4-5 days.
