🐰Vic’s Passionfruit Easter Slice 🐇

This worked out beautifully! It looks a little bit naughty 🤭 but it’s 100% guilt-free, using magical chickpeas and my passionfruit Curd! 
 
It has passed the taste test with flying colours 🌈 I challenge you to make it and tell me what you think please. 
 
First you need to make a batch of my Passionfruit curd, recipe here  a couple of posts back. It works well with lemon curd too.
 
What you need.
🔸2 tins of chickpeas (400g) drained and rinsed very well.
🔸3 eggs.
🔸️22 g *coconut flour @freshlifefood  *gifted 🙏You can substitute with regular flour but amend the smart points accordingly. 
🔸️2 tsp vanilla essence. 
🔸️⅓ cup of SF maple syrup.
🔸️3 fresh passionfruit.
 
What to do.
Preheat the oven to 180° fan. Process all the ingredients together except the passionfruit. Always taste the batter to make sure it’s sweet enough Fold in the passionfruit. It will be the same consistency as hummus and quite moist. Don’t worry, it’s supposed to be like this. ⠀⠀⠀⠀⠀⠀
Pour the batter into your baking pan. I choose to use my silicon 9×9 inch baking pan. Bake for 25-30 minutes until golden. Times may vary. Let completely cool. Carefully remove from the pan and spread generously with curd. Cut into 12 squares and top each one with a @cadburys chocolate egg and amend the smart points accordingly.
This will last 4-5 days refrigerated.
