It takes less than 5 minutes to make in the microwave!

You will want to quadruple this recipe! It’s incredibly DELICIOUS😋 I freeze mine in ice cube trays, to always have some on hand. Great for smoothies, waffles, pancakes and not forgetting cakes and

What you need 👇 
🔸Juice of 3 medium lemons (roughly ½ a cup).
🔸¼ cup of substitute sugar. 
🔸2 lightly whisked eggs.

That’s all you need.

Oh……. and a microwave, a whisk and a bowl 😆

What to do 👇 
In a medium sized bowl add lemon juice and sugar. Microwave until the sugar dissolves. 

Quickly whisk in the eggs. Microwave for 30 seconds and whisk again. Repeat this 3-4 times. It will magically start to thicken and double in size. Keep an eye on it to make sure it doesn’t boil over. 

Sometimes you will get tiny flecks of egg white appear. Don’t worry, just press the curd through a sieve. You could alternatively leave them in to show it’s homemade 🔶️ like I do. It will thicken more as it cools and sets. 

Store in an airtight container in the fridge for a couple of weeks, if it lasts that long🤭
