Ingredients:
2 slices of wholemeal bread •Homemade light hummus (a few chickpeas, 1/2 tbsp Alpro, soya yogurt, 1/2 tbsp organic Tahini)
1 tbsp olive oil, plus extra for drizzling
1 ripe avocado, peeled and pitted
1 ripe banana, sliced
1 tsp Manuka Honey
1 tsp pomegranate
1 tsp ground cumin
2 cloves garlic, minced
2 cherry tomatoes, halved
A good handful of almond and mint
Salt and black pepper (to taste)
