Ingredient:
1 or 2 slice of gluten-free (if preferred) wholemeal bread •Homemade (baked) vegan Falafel (1/2 cup chickpeas, 1 garlic clove, 1 tsp ground cumin, 2 tbsp chickpea flour, Handful of parsley, 1 tsp ground coriander)
3 to 5 cherry tomatoes, halved
1/2 large avocado •Homemade light hummus (a few chickpeas, 1/2 tbsp Alpro, soya yogurt, 1/2 tbsp organic Tahini)
1 medium potato
1 tbsp ground paprika
1 tsp ground cumin
Salt and Black pepper (to taste)
