Ingredients:
2 slices of wholemeal bread (optional)
1/2 small spring onion, thinly chopped •Homemade light hummus (a few chickpeas, 1/2 tbsp Alpro, soya yogurt, 1/2 tbsp organic Tahini)
1/2 large avocado
2 garlic cloves, minced
2 tbsp edamame
1 tsp julienne-cut carrot (optional)
1 tsp sweetcorn/ Green peas (optional)
1 tsp ground paprika
1tsp ground cumin
Zest of 1 medium lemon
A good handful of fresh parsley
Salt and black pepper (to taste)
