Ingredients:
2 wholemeal breads
1/2 cup chickpeas, rinsed and drained
1 large tomatoes, crushed and chopped (optional)
Homemade light hummus (a few chickpeas, 1/2 tbsp Alpro-soya yogurt, 1tbsp lemon juice, 1/2 tbsp organic Tahini)
1 tbsp olive oil, plus extra for drizzling
1 small onion, peeled and thinly sliced
2 cloves garlic, peeled and minced
1 tbsp smoked paprika
1/2 tsp ground cumin
Salt, black pepper and Parsley (to taste)
