✨Turkey Veggie Meatballs with Pasta✨⁣
Happy Monday everyone!! I actually woke up feeling pretty motivated for the week ahead, even though my sleep schedule is still messed up and my body hates these early wake-up times. One of my goals for this year is to get back into reading for fun, which I haven’t done since literally middle school. I used to LOVE reading and I thought it would be a great thing to get back to. It will be a great way for me to relax and de-stress. Anyways, I spent 35 minutes reading before bed last night and it was so nice. I could use some book recommendations if any of you have some. (I’m leaning towards easy/light fiction reads, nothing too heavy or scary)⁣
Back to food-related things! I know this is not the best picture, sorry about that, but I cooked these at night and the lighting in my kitchen was terrible. These meatballs, however, were INCREDIBLE. I used @wellnessbykay recipe for Chicken Veggie Meatballs (subbing ground turkey for ground chicken, all-purpose flour for almond flour, and dairy-free parmesan for regular parm) and they are honestly one of the best meatballs I’ve ever had. I love all the veggies in them and I will definitely be making larger batches and putting them in the freezer to have on hand!⁣
