✨Teriyaki Tofu, Green Beans, and Jasmine Rice✨⁣
Hi everyone and happy Wednesday!! The last two days have definitely been crazy and I don’t know about you all, but looking at the color-coded election map is pretty much all I have been doing. I know a lot of people have been feeling even more stressed out and anxious lately, so don’t forget to take time for yourself and do the things that you enjoy doing. Between all the schoolwork that is piling up in the last few weeks of the semester and the election, my mind is just working non-stop. Something that makes me happier is good food! Delicious meals between classes and assignments makes everything better! I have been experimenting a lot with tofu lately, and even though it is something that I used to dislike, I love it now. Air-frying and sauces make all the difference!⁣

dEATs:⁣
-Teriyaki Glazed Tofu (Cut one block of extra-firm tofu into cubes and place in a container. I then poured @primalkitchenfoods no-soy teriyaki over the top of the tofu, tossed the tofu pieces around a bit, placed the lid on the container, and put it into the fridge for a few hours. After a few hours passed, I removed the container from the fridge and placed all the tofu pieces into a single layer in the air-fryer at 400 degrees F. Toss every few minutes and cook until crisp enough to your liking (mine were probably in there for around 15minutes). While those are air-frying, pour the leftover teriyaki sauce from the marinade into a small saucepan. Add some soy sauce and honey as well (I eyeballed) and heat on medium until simmering. I then lowered the heat and just kept whisking often until a thickened glaze had formed. By that time, the tofu had finished air-frying and I added the tofu to the sauce and tossed until coated well. Then serve!)⁣
-Roasted Green Beans (Add washed and dried green beans to a baking sheet, drizzle with avocado oil, season with salt, pepper, & garlic powder, bake at 400 degrees F until cooked to liking)⁣
-Jasmine Rice⁣
-Topped the tofu with sesame seeds⁣
