Spinach toast—2 ways
Ingredients:
2 slices of wholemeal bread
1/2 cup baby spinach, lightly packed and roughly chopped
1 small tomato, halved (optional) 1 large egg
3-6 mushrooms, finely chopped
•Homemade light hummus (a few chickpeas, 1/2 tbsp Alpro, soya yogurt, 1/2 tbsp organic Tahini)
1 tbsp fresh lemon juice
4 cloves garlic, minced
1 tsp ground turmeric
1 tsp ground cumin
1 tsp ground paprika
A good handful of parsley (optional)
Salt and black pepper (to taste)
