✨Spinach & Mushroom Scrambled Eggs, Tomatoes, and a Bagel✨⁣
Good morning!! Happy Monday to you all! I hope that you all have a great day and an even better week. I’m excited to have the day off today to get some extra relaxing in and prepare for the week ahead. Even though I’ve been really busy these past few weeks, I always try to find time to cook for myself because it has felt super therapeutic lately. I’ve been feeling more inspired to try new ingredients and new recipes and my Pinterest boards have become full of recipes for me to try. This breakfast is definitely not one of those new ideas, but scrambled eggs & bagels are my go-to for breakfast. There is just nothing better! ⁣

dEATs:⁣
-Eggs (Sauté some diced mushrooms in @earthbalance vegan soy-free butter, add in spinach and sauté, then add three whisked eggs and cook until done)⁣
-Bagel (Toasted and topped with @kitehillfoods dairy free chive cream cheese)⁣
-Fresh cherry tomatoes on the vine⁣
