Something a little different for you to make today!
♡Vic’s Savoury pancakes/crepes ♡
These are using my traditional English recipe you all loved so much, just with an added garlic and mushroom filling. So D-E-L-I-C-I-O-U-S!! I can’t wait to make them again.

For the pancakes.
🔸️1 medium egg.
🔸️2 tbsp plain flour.
🔸️90 mls of unsweetened almond milk @sogoodnz or milk of your choice.
What to do.
Whisk everything together. Heat a good quality non sick fry pan, pour in a little of the batter, swirling the pan around to form a circle. Cook for a couple of minutes until it starts to bubble, then flip it over to cook the other side. Repeat until there is no more batter left. Mine made 4 medium pancakes. How many you make depends on the size of your pan 😉. Place in a warm oven.
For the filling.
🔸️150g mushrooms, washed and roughly sliced.
🔸️⅛ cup 99% fat free yoghurt @cyclops_yoghurt
🔸️2 tsp dijon mustard.
🔸️a few fresh herbs chopped. I used WW *herb scissors perfect! (parsley, thyme, rosemary)
🔸️½ a white onion, finely chopped. WW drawstring *mini food processor another excellent kitchen tool. *gifted
🔸️1 clove of garlic, minced.
What to do.
To make the filling, in a frying pan gently cook the onion until soft. Add the garlic and mushrooms and cook for 5-8 minutes until softened. Add the yoghurt and cook for a couple of minutes, stirring until heated through.
Season to taste with salt and lemon pepper. Stir in the herbs. Divide mixture between the pancakes and fold in half or roll up. Serve immediately, sprinkled with a few extra fresh herbs.
