Quesadillas are my fave way to use up random veggie/bean leftovers! I had some leftover roasted sweet potatoes and black beans in the fridge, so I decided to pair them with some chicken sausage and cheese and put them all together to create a delicious quesadilla. I served with some avocado mash🥑 from Good Foods and a bit of fruit salad (watermelon, honeydew, strawberries)⁣ 🍉🍈🍓
dEATS:⁣
-Cut up one chicken sausage (I used the Amylu brand) and sauté on a pan until crispy⁣
-Add the diced sweet potato and black beans to the sausage to warm them up and crisp the sweet potato a bit⁣
-Remove from heat⁣
-Spray a bit of cooking spray on a frying pan (or any butter/oil of choice), bring to a medium-low heat, and add large tortilla⁣
-Sprinkle cheese onto half of tortilla (I used mozzarella and a little cheddar), let melt, then add potato, bean, and sausage mixture⁣
-Add more cheese on top of mixture and fold the empty half of the tortilla over the full half⁣
-Flip to brown other side if not toasted enough, then remove from heat and enjoy!⁣
