Mixed Vegetables and rice recipe
Ingredients:
2 tablespoons olive oil
1/2 cup basmati rice
50g chickpeas, rinsed and drained
50g mixed vegetables (Carrot, Broccoli, Babycorn, Beans, Mangetout Peas)
1/3 cup of fresh spinach
2 cloves garlic chopped
1 tbsp oregano
1 tsp turmeric
1 tbsp ground cumin
2 large tomatoes, crushed and chopped
A good handful of pine and fresh parsley, chopped
Salt, thyme and chilli pepper (to taste)
