Just pulled these little lovelies out of the oven 😋😋 Tasty and quick to whip up. I’ve been making them nearly every week for years.
You can use any veg that you have on hand, a perfect opportunity to use leftovers too. A scrumptious breakfast, lunch or snack. I’m sure the kids will love them too😊
♡Vic’s Veggie Frittata♡
What you need 👇
🔸️2 tbsp oat bran. Or flour amend the smart points accordingly.
🔸️1 tsp onion powder.
🔸️¼ tsp mustard powder.
🔸️1 cup of any cooked vegetables roughly chopped. Today I used leftover cooked cabbage.
🔸️100g 99% fat free yoghurt. I used @cyclops_yoghurt
🔸️1 tbsp parmesan cheese.
🔸️Seasoning to taste. I use garlic salt and lemon pepper.
What to do 👇
Preheat the oven to 180° fan bake. Whisk the eggs, yoghurt, seasonings and oat bran to form a batter. Pour the mix evenly into baking tins. Then divide the veg equally between the pans. Sprinkle with cheese and I added a dusting of paprika. Bake for 25 minutes until golden.
