Celebrating with my 5 minute,  Chocolate Brownie Mini Cakes.

These are intensely moist and fudgy ohhh and chocolatey. Sandwiched together with a cheesecake filling and juicy fresh cherries🍒 

What you need for the mini cakes.
🔸️1 cup of All Bran (60g). @kelloggsaus
🔸️26g avalanche SF drinking chocolate.
🔸️2 Weet-Bix.
🔸️2 heaped tbsp of substitute sugar. @sukrinaus
🔸️1 medium egg.
🔸️2 tsp of cocoa powder. 

What you need for the filling.
🔸️1 cup of pitted fresh cherries (or defrosted frozen ones)
🔸️100g fat free cottage cheese, processed with🔸️1 tsp vanilla essence 🔸️1 tbsp substitute sugar, I used @sukrin bought from Amazon

What to do.
Prepare your pans, I used my medium silicone muffin pan. In a medium bowl pour 250mls of boiling water over the All Bran, Weet-Bix, sugar and drinking chocolate. Let it soak through for a couple of minutes. Add the egg and beat the mixture until it forms a batter. 

🔶️ALWAYS taste test the batter to make sure it’s sweet enough for you 🔶️
Pour into 6 silicone muffin cases. Microwave on high for 5 minutes. They’re ready when a skewer comes out clean.
Alternatively you can bake at 180° for 20-25 minutes. I find they are not as moist cooked this way. 
Once they’ve completely cooled sandwich 2 muffins together (to make 3 mini cakes) with a layer of cheesecake mixture and cherries, sprinkle with @sukrinusa icing sugar. 

Serves 3 mini cakes.
