✨Italian Chicken and Potatoes with Balsamic Glazed Carrots✨⁣⁣
Hi everyone and happy Wednesday!! I took a little break from posting to enjoy the holidays and relax during my Thanksgiving break, but I’m back. Finals are next week and I can’t wait to be done! I love everything about December and Christmas, so it’s definitely one of my favorite times of the year. Everyone needs that joy more than ever this year. I hope you all are staying safe and healthy! dEATs:⁣
-Italian Chicken (Chicken breasts topped with cubes of butter (I used @earthbalance soy-free butter) and sprinkled with half a packet of Italian dressing mix, baked at 350 degrees F until cooked through)⁣
-Italian Potatoes (Peel, wash, and cube Russet potatoes, Top with cubes of butter and the other half of the Italian dressing mix, Bake at 350 degrees F until soft)⁣
-Balsamic Glazed Carrots (Peel, wash, and chop carrots, Drizzle with avocado oil and season with salt&pepper, Bake at 350 degrees F until soft. For the glaze, combine balsamic vinegar and honey in a small saucepan and let simmer until thickened a bit, then drizzle over the carrots and mix)⁣
