I just love Gingerbread don’t you?
Another recipe that I created last Christmas that’s scrumptious and ever so easy for this busy time of year. I didn’t make the cute gingerbread people. I bought them from @thewarehousenz and I’m delighted to tell you they’re only 1 smart point each! Winning!
YES I’m using the magical chickpeas for this festive little treat 🤩 with all the other incredible flavours you cannot taste them! You have to trust me on this one.
🎄Vic’s Chocolate Gingerbread Cakes🎄Serves 9.

My gingerbread spice mix gives this moist cake all the flavours of Christmas.
What you need .
🔸1 can (400g) of chickpeas drained and rinsed well.
🔸️1 tbsp golden syrup. (5sp)
🔸️1 tbsp cocoa powder. (1sp)
🔸️1 tsp ground ginger.
🔸1 tbsp gingerbread spice mix. Depending on how spiced you like it. As a substitute you could just use powdered ginger, to suit your own taste (see my highlights for ).
🔸¼ cup of substitute sugar. I used @sukrinusa golden.
🔸1 tbsp vanilla essence.
🔸1 tsp baking powder.
What to do.
Preheat your oven to 180° fan. Prepare your pan. I used my @kmart silicone mini loaf pans 👌
Process all the ingredients together (except the baking powder – fold this in last) until smooth. I used my Nutribullet.
🔶️ Taste the batter to make sure it’s sweetened and spiced enough. 🔶️
Pour batter into the pans, sprinkle with a little extra gingerbread spice mix.
Bake for 20-25 minutes, until the skewer comes out clean.
Top with gingerbread people. It also goes very well with one of my chocolate sauces
