i just fancied a salad today! This is easy, delicious, single serve lunch or dinner, awakening the good, old, retro 1970’s prawn cocktail. My mum used to serve this in our pub it was a favourite then and still is of ours.
This will definitely be on repeat in Vic’s kitchen.

♡Vic’s Prawn Cocktail Salad♡

What you need.
🔸️1 cup of salad greens.
🔸️A few thin slices of red onion.
🔸️¼ medium avocado. I used the @ww_aunz avocado tool. Have you ordered yours yet?
🔸️1 truss tomato quartered.
🔸️1 medium soft boiled egg. I used @ww_aunz egg timer. Perfect every time😉

Prawn Cocktail.
🔸️½ cup cooked king prawns, tails removed. (roughly about 6-8 ).
🔸️⅓ cup 99% fat free Greek yoghurt of choice.@cyclops_yoghurt
🔸️2 tsp Worcestershire sauce.
🔸️Tomato paste to taste.
🔸️Juice of half a small lemon.
🔸️Seasoning to taste. I recommend using lemon pepper and garlic salt.

What to do.
Combine everything together for the prawn cocktail, set aside while you assemble your salad. I dusted mine with a little Cayenne pepper🔥

Serves 1.
