I absolutely love retro recipes, don’t you? Baking day back in my kitchen 🥰
The first recipe I’ve made in my beautiful tins truly warms my heart. It was kindly given to me by my lovely friend, Robbie @woolly1_ww which was found in her mum’s (Mavis) cookbook, so as you can imagine, it’s ‘VERY’ special🥰
I’ve modified it slightly.
♡Mavis’ Date Roll♡ Serves 12. 💚💙💜 2 smart points.
What you need.
🔸️20 medjool fresh dates, pitted and chopped. I use scissors for this
🔸️1 tsp baking soda (bicarbonate)
🔸️1½ cups of boiling water.
🔸️1 medium egg, slightly whisked.
🔸️¼ cup substitute sugar*. I used @sukrinaus No nasty after taste.
🔸️20g light spread, melted. I use @flora light.
🔸️1½ cups of flour.
🔸️2 tsp ground ginger. Optional, but compliments it so well.
🔸️1 tsp baking powder.
🔸️½ tsp salt.
What to do.
Preheat your oven to 150°. Line two nut loaf tins or a regular loaf pan with parchment paper. I do the bottom of the tin also. I’ve learnt the hard way
In a large bowl, add the dates and baking soda. Pour the boiling water over, then leave for 10 minutes.
Stir in the egg, sugar and melted spread. Sieve in the flour, ginger, salt and baking powder and combine until you have a smooth batter. Carefully pour into your tins. I use a jug for this. So much easier
Place the lids on tightly and stand upright on a baking tray. Cook for 1 hour 15 minutes.
Leave to cool slightly before carefully removing from the tin.
❄Freezes very well.
