Ingredients:
2 slices of wholemeal bread
1/3 Avocado, fresh
1 small cucumber, halved and cut into 4 pieces •Homemade light hummus (a few chickpeas, 1/2 tbsp Alpro, soya yogurt, 1/2 tbsp organic Tahini)
1 tbsp olive oil, plus extra for drizzling (optional)
2 cloves garlic, peeled and minced
1 tsp chilli pepper
1 tbsp smoked paprika
1/2 tsp ground cumin
A good handful of parsley
Salt, black pepper (to taste)
