Ingredients:
3 slices of wholemeal bread
1/3 cup spinach
1 tbsp chickpeas, rinsed and drained
1 cherry tomato, halved (optional)
•Homemade light hummus (a few chickpeas, 1/2 tbsp Alpro, soya yogurt, 1/2 tbsp organic Tahini)
1 tbsp olive oil, plus extra for drizzling
1/2 large avocado, smashed
1 tsp ground paprika
1tsp ground cumin
1 tbsp pomegranate, fresh
2 cloves garlic, peeled and minced
Salt, black pepper (to taste)
