Hello lovelies 🌞. This is the cake I served for Sunday dinner. Same method as but different flavour combos.
♡Vic’s Apple and Cinnamon Cake♡ Serves 6.
This plant based cake is so good! It’s delightfully spiced with cinnamon and naturally sweetened with fresh, juicy medjool dates. Let me know when you try it please.
What you need.
🔸️2 cans of chickpeas, drained and rinsed well.
🔸️15 fresh medjool dates, pitted. If they’re a little dry, simply microwave for 20-30 seconds.
🔸️1 tbsp cinnamon. Alternatively use ginger to taste.
🔸️2 tsp baking powder.
🔸️1 can of chopped apples in natural juice, drained, or use fresh.
🔸️1 tbsp vanilla essence.
What to do.
Preheat your oven to 180° fan. Prepare your pans. Today I used my beautiful, new cake pan (28.8 x 25 x 4.8 cm).
Process chickpeas and dates until completely smooth. Add the rest of the ingredients except the apple and process. Stir in the apples and pour into your pan. I added a freshly sliced apple for decoration (optional) 🔶️ Taste the batter to make sure it’s sweet enough for you. Bake for 35-45 minutes. Time may vary. It’s cooked when a skewer comes out clean.
Let completely cool in the pan. I served mine with @cyclops_yoghurt thick and creamy yoghurt and an extra sprinkle of cinnamon.
