Hello lovelies 🌞, I’ve not done a for ages! These are perfect for mother’s day this Sunday.
When you bite into these you get a wonderful tangy, tart taste from the beautiful raspberries. Your tastebuds will do a little dance!
♡Vic’s Raspberry Muffins♡
💚2 💜ZERO 💙1 each.
What you need.
🔸️1 cup of any oats. I use @harrawaysnz rolled oats, for my New Zealand friends they’re less smart points 😉
🔸️¼ cup of substitute sugar. Alternatively use sugar free maple syrup.
🔸️2 medium eggs.
🔸️1 tsp vanilla essence.
🔸️145g 99% fat free Greek yoghurt. I use @cyclops_yoghurt
🔸️½ tsp baking powder.
🔸️1 cup of raspberries fresh or frozen (defrosted)
What to do.
Preheat the oven to 200° fan. Mix all the ingredients together to form a batter. Pour into medium muffin pans, I use silicone pans bought from @amazon
Bake for 25 minutes. The muffins are ready when they’re golden and a skewer comes out clean.
