If you haven’t baked with chickpeas ‘yet’ (why not?🤔 I’m the ‘Chickpea Queen’ 😆), this is the recipe to start with. These are perfectly spiced with warming ginger, naturally sweetened and very light and fluffy. Let me know when you try them please. They could be your new favourite 😉
♡Vic’s Pear and Gingerbread Muffins♡ Serves 12.
What you need.
🔸️2 cans of chickpeas, drained and rinsed well.
🔸️15 fresh medjool dates, pitted. If they’re a little dry simply microwave for 20-30 seconds.
🔸️3 tsp gingerbread spice mix my recipe is here Alternatively use 3 tsp ground ginger.
🔸️1 tsp baking powder.
🔸️1 can of pears in natural juice, drained, or fresh.
🔸️1 tablespoon vanilla essence.
What to do.
Preheat your oven to 180° fan. Prepare your pans. Process chickpeas and dates until completely smooth. Add the rest of the ingredients except the pears and process.
🔶️ Taste the batter to make sure it’s sweet enough for you.
Pour batter into your pans and place a piece of pear into each one.
Bake for 30-35 minutes. Times may vary. They’re cooked when a skewer comes out clean.
