Happy Monday my lovelies🌞. A special treat for you today

As promised 🥕Vic’s Savoury Cheesy Carrot Muffin 🥕 Serves 1. 💚 6 💙 3 💜 1  smart points
A while back I made a carrot cake (click for all the different recipes) which I loved. With Easter just around the corner I’ve made this scrumptious savoury version 😋
As always I’ve included two cooking methods for your convenience. I prefer mine baked in the air-fryer because it creates a crispy crust 😋
What you need.
🔸️22g rolled oats. @harrawaysnz
🔸️2 tbsp 99% fat free Greek yoghurt. I used @cyclops_yoghurt
🔸️1 tbsp warm water.
🔸️1 medium egg.
🔸️30g grated carrot, roughly ½ of a medium one.
🔸️1 light Laughing Cow triangle.
🔸️Seasoning to taste. I use ¼ tsp lemon pepper and garlic salt as always.
🔸️Sprinkle of mixed seeds optional. 
Optional zero extras.
🔸️1 tsp mild curry powder (click here for my recipe
🔸️1 tbsp roughly chopped fresh coriander. 
Instructions (air fryer)
Preheat the air fryer to 170°C. Combine all the ingredients together except the cheese. Pour the batter into a small tuna tin ( 180g tin is the perfect size for this and never sticks ) or a ramekin. Push the cheese triangle into the middle and sprinkle with seeds. Bake for 18-22 minutes or it’s ready when a skewer comes out clean. Time may vary.
Instructions (microwave ) 
If you’re short on time try this method.  Rinse out a cup, mug or ramekin with water to prevent sticking. Follow the above steps with the mixture and microwave for 2 minutes (depending on your microwave).
