H a p p y ๐ŸŒž I hope these brighten your day!

These plant based muffins are super easy to make and the ginger compliments it so well. Not too sweet and a pleasure to eat ๐Ÿ˜‰

What you need ๐Ÿ‘‡

๐Ÿ”ธ1 cup 200g (400g can if using) chickpeas drained and rinsed well. You can not taste them ‘TRUST’ me๐Ÿ˜‰
๐Ÿ”ธ2 medium eggs.
๐Ÿ”ธ๏ธ1 tbsp ground ginger. Adjust to suit your own taste.
๐Ÿ”ธยผ cup SF maple syrup.ย ย 
๐Ÿ”ธ1 tbsp vanilla essence.
๐Ÿ”ธ1ยฝ tsp baking powder.
๐Ÿ”ธ๏ธ1 small apples thinly sliced. I used a mini madeline.ย 

What to do ๐Ÿ‘‡

Preheat your oven to 180ยฐ fan. Prepare your pans. Spray if you need to.
Process all the ingredients (except the apples) together until smooth.ย 

๐Ÿ”ถ๏ธ Taste the batter to make sure it’s sweet enough for you ๐Ÿ˜‰

Pour batter into your pans. Carefully arrange the sliced apple on the top. Sprinkle with cinnamon or nutmeg, optional.

Bake for 25-30 minutes. They’re ready when a skewer comes out clean.

Serves 6.
