Good morning lovelies 🌞 AS PROMISED! ♡Vic’s Ranch Salad♡ 
Serves 4. 💙1 💜1 💚4 smart points.

I know it’s winter here in the southern hemisphere, but I find this salad so comforting. Let me know what you think when you make it, please. If you haven’t made my ranch seasoning mix that I posted the other day, you’re so missing out🤭. Get the recipe here versatile! Add it to yoghurt as a dip or dressing, or season your favourite proteins. Today I’m using chicken breasts layered with cobb salad, ‘Vic’s Style’. 
 
What you need.
🔸️2 medium chicken breasts or 8 tenderloins.
🔸️80g 99% fat free yoghurt @cyclops_yoghurt
🔸️2 large handfuls of spinach leaves, roughly chopped. 
🔸️4 slices of @tegal chicken rashers. Cooked until crispy then chopped. alternatively you can use bacon ammed the smart points accordingly.
🔸️50g reduced fat feta, crumbled. I use @mainlandnz
🔸️1 punnet of cherry tomatoes. 
🔸️4 soft boiled eggs. I used the WW egg timer – perfect! 
🔸️2 tbsp of ranch seasoning mix
🔸️½ a red onion, finely sliced, or I used my ‘pickled pink onions’ recipe I’ll post tomorrow.
 
What to do.
Preheat air-fryer to 180°. This can also be cooked in a conventional oven at the same temperature. Cut the chicken into 3-4cm cubes. Add the ranch mix and yoghurt and toss, making sure all the chicken is completely covered. If time permits marinade for 2 hours, I highly recommend it. Bake for 20-25 minutes, turning after 10 minutes, so the chicken doesn’t clump together. Let it cool before assembling your salad. Serve with a dollops of @cyclops_yoghurt yoghurt mixed with some ranch mix and a squeeze of fresh lemon. 
 
For meal prep divide into 4 containers and refrigerate up to 3 days.
