🍋Vic’s Baked Lemon Lucious Cheesecake Cups🍋
This recipe is based on my traditional cheesecake and my cheesecake jars without a bottom 🤭
I am so delighted to share with you my friendly version. The filling is smooth, velvety, and creamy. You really must try it for yourself. It’s seriously lemony and treat to eat!
What you need.
🔸️500g light cottage cheese. I use @meadowfreshnz
🔸️2 medium eggs.
🔸️4 tbsp lemon juice.
🔸️140g 99% fat free yoghurt. I use @cyclops_yoghurt
🔸️¼ cup of substitute sugar. I use @sukrinaus
🔸️2 tsp vanilla essence.
What to do.
Preheat air-fryer/ oven to 160° fan. I used mugs for these, sprayed with oil.
Process everything together until smooth. Bake for 25-30 minutes. Times may vary.
Let them completely cool.
I served mine with a thick layer of my click for the recipe, and a sprinkle of coconut flakes on top. Amend the smart points accordingly.
Makes 4 cheesecakes.
