So pleased to see you’ve been enjoying my but have you tried the sweet version yet? I’ve posted a few variations.
I put a poll up in my stories and this flavour was the top request. Feeling a bit Christmassy already, now that Halloween is behind us. Did you know there’s only 8 more Mondays until Christmas 🙆🏼♀️🎅 my absolute favourite time of the year.
♡Vic’s Double Chocolate Ginger Muffin ♡
Single serve chocolate muffin with warming ginger and drizzled with my decadent chocolate sauce, what more can I say?
What you need👇
🔸️22g rolled oats. I used @harrawaysnz
🔸️2 tbsp 99% fat free Greek yoghurt. I used @cyclops_yoghurt
🔸️1 tbsp warm water.
🔸️1 medium egg.
🔸️2 tsp of SF maple syrup. Alternatively you can use 2 tsp substitute sugar.
🔸️2 tsp cocoa.
🔸️1 tsp ground ginger.
🔸️Half a serve of click for the recipe.
🔶️Taste the batter to make sure it’s sweet enough for you
What to do👇
Preheat the air fryer to 180°. Combine all the dry ingredients together in a small bowl. Add the egg, water and yoghurt until well combined. I baked mine in a silicone bundt pan (a tuna tin (180g) is the perfect size for this) or a ramekin. Pour the mixture in the bottom and bake for 20-25 minutes or when a skewer comes out clean.
I prefer baking mine, I like the crispy edges. But here is an alternative cooking method: 🔶️ Rinse out a cup, mug or ramekin with water to prevent sticking. Follow the above steps with the mixture and Microwave for 2 minutes (depending on your microwave). It’s cooked when a skewer comes out clean.
Before serving pour on some of my chocolate sauce😋
