Do you love pasta?
I do too! I discovered these plant based pastas that are wheat free, vegan, vegetarian, gluten free and don’t taste like cardboard!! They actually taste like the really thing, honestly, trust me.
With the abundance of beautiful big ripe tomatoes, I had to include them in this dish.

Vic’s Summer Tomato Pasta salad 🍅
Serves 4.
💚 8 💙 6 💜 1  Depending which brands of ingredients you use 😊

What you need.
🔸️250g of pasta I used @sanremopasta made with peas, lentils and chickpeas.
🔸️4 boiled eggs. I used the WW new egg timer *gifted Thanks 🙏 to get perfect soft yolks, just how I like them.
🔸️3 medium tomatoes, skinned. Place in a bowl of boiling water for 5 minutes and gently peel the skin off, use an apple corer and deseed. Roughly chop.
🔸️¼ cup 99% fat free yoghurt. @cyclops_yoghurt
🔸️30g sun-dried tomato pesto. I used @leggosau
🔸️Fresh chopped parsley. I used the new WW herb scissors *gifted also.
🔸️Season to taste, I highly recommend using garlic salt and lemon pepper

What to do.
Cook the pasta as directed on the packet, drain and cool. Cook eggs to your liking , peel and roughly chop. Combine with all the other ingredients well. Serve as a main meal or perfect as a side.
