✨Chocolate Chip Banana Muffins ✨
These muffins are a great way to use up any brown bananas you may have sitting around and can be easily customized to include any toppings you want! I used mini chocolate chips in my dough and topped with a few regular size chocolate chips and a walnut before baking.⁣⁣
⁣⁣
dEATS:⁣⁣
-Sift together 2 cups all-purpose flour, 3 tsp. baking powder, 1/2 tsp. salt, and 1/2 tsp. ground cinnamon in a bowl and set aside⁣⁣
-In another bowl, whisk together 3/4 cup plain Greek yogurt, 2 eggs, 1 cup mashed banana, 1/3 cup honey, and 3 Tbsp. light brown sugar until they are all well incorporated⁣⁣
-Add the dry ingredients to the wet and fold together until just combined (don’t over mix)⁣⁣
-Fold in 1/4 cup melted coconut oil, until just combined, and then fold in 1 cup of chocolate chips (or more if you want)⁣⁣
-Divide batter evenly into a lined muffin tin (I was able to get 15 muffins) and add extra toppings if you want⁣⁣
-Bake at 400 degrees F, until tops are golden brown and a toothpick comes out clean (mine needed 16 minutes, but I would check at the 14/15 minute mark in case your oven bakes faster)⁣⁣
-Remove and let cool in tin for at least 5 minutes before moving them onto a cooling rack⁣⁣
