Brunch sorted for the weekend 😉

♡ Vic’s Potato & Ham Cakes♡

This recipe couldn’t be any easier. Extremely TASTY. Perfect as a side dish or stacked high with runny eggs and avocado 😋

What you need.
🔸️500g washed potatoes (unpeeled) I used agria.
🔸️2 eggs.
🔸️Chopped fresh herbs.  I used a little of each,  lemon thyme, chives, rosemary and parsley. You can use dried mixed herbs.
🔸️100g ham steaks chopped. Alternatively you can use deli ham, amed the smart points accordingly.
🔸️1 spring onions finely chopped (optional)
🔸️Seasoning to taste.

What to do.
I cooked the potatoes in the microwave for 10-15 minutes. You want them just to say cooked. Don’t over cook them.  Some starch will come out,  just drain this off. Leave them to completely cool or in the fridge overnight.

Preheat oven to 200° or air-fryer 180°. In a large bowl grate the potatoes, including the skin.  Add everything else and mix together until well combined.

Place in chosen baking pans. Spray the tops with oil. I sprinkled with black and white sesame seeds (optional)
Cook for 30-35 minutes, time’s may vary.

I got 7 out of this mix, just depends what size your pans are.

❄They freeze well ❄ 🔶️ once defrosted I reccomend using your air-fryer or  lightly grilled to warm them through.
