Good morning and happy Friday everyone! I have a super busy weekend ahead of me and it’s breakfasts like this one that will help fuel me through. Most of my breakfasts look pretty similar, but I changed it up with this one and made some breakfast potatoes! They were delicious and a great addition.
-Scrambled eggs (cooked in @earthbalance soy-free vegan butter) with a spinach and arugula mix
-Half of a plain bagel, toasted, and topped with @kitehillfoods chive cream cheese
-Grape tomatoes, halved
-1 Yukon Gold potato, washed and chopped into small pieces, tossed in avocado oil, salt, pepper, paprika, & garlic power, air-fryed at 400 degrees F for 10-15 minutes
