✨BBQ Pulled Jackfruit with Homemade Coleslaw and Potato Wedges✨⁣
Happy Monday everyone!! I hope you all had a good weekend! Lately, I’ve been super intrigued with jackfruit because it has been popping up all over my feed and I was curious to find out how it tasted. I saw a lot of pictures where people used it to create a vegan version of pulled pork/chicken and I thought it would be super fun to try that out. I found some canned green young jackfruit at Trader Joe’s and cooked it up and I LOVED it!! It’s super delicious, definitely a great alternative to pork/chicken if you are a vegan or vegetarian, and it was a filling meal. ⁣The meal could be make fully vegan if you make a vegan coleslaw and use a vegan bun.

-BBQ Pulled Jackfruit topped with Homemade Coleslaw (let me know if you would like the recipe) on a Brioche Bun⁣
-Homemade Oven-Baked Potato Wedges (let me know if you would like the recipe)⁣

Jackfruit Recipe:⁣
-Drain 2 20oz. cans of young green jackfruit (I used TJ’s) and rinse well (especially if packed in brine like mine were)⁣
-Heat 1 Tbsp. of olive oil in skillet over medium heat and add in 1 small diced onion, Sauté until translucent (~4 min)⁣
-Add 1 teaspoon of minced garlic and sauté for an additional minute⁣
-Add the rinsed&drained jackfruit, 1 cup BBQ sauce of choice, and 1/2 cup water⁣
-Lower heat to medium-low, cover, and let simmer for 20 minutes, stirring occasionally⁣
-After 20min, shred the jackfruit with two forks and add in some salt, garlic powder, and sriracha (I didn’t measure, I just eyeballed so add in a little or a lot depending on your tastes)⁣
-Put the heat on high and let the jackfruit cook, uncovered, until the sauce thickens more and you get some crispy/blackened pieces (~10min)⁣
-Remove from heat and serve! Enjoy!⁣
