As promised! 🌈 Vic’s Rainbow Rice. 💚2 💙2 💜 1.
This is fabulous! Ever so easy, fresh, healthy and packed full of your 5 serves a day veggies. Just add your own protein – chicken, salmon, fish or tofu. Today I’m adding ham steaks.
This serves 10 (one cup) and freezes perfectly❄
What you need.
🔸️2 cups of cooked rice. I used brown basmati.
🔸️600g raw cauliflower, riced.
🔸️200g ham steaks, cubed @madbutchernz or protein of choice.
🔸️1 cup of red cabbage, shredded.
🔸️2 carrots, chopped. I used my @ww_aunz mini food processor.
🔸️1 large red onion, roughly chopped.
🔸️1 tbsp of minced garlic.
🔸️½ tbsp of minced ginger.
🔸️2 tbsp of hot sweet chilli sauce.
🔸️3 tbsp of fish sauce.
🔸️1 tbsp of soya sauce.
🔸️½ a cup of roughly chopped coriander.
🔸️Seasoning to taste. I recommend using lemon pepper and garlic salt.
What to do.
Fry onion until soft, add the ham steaks and cook until browned. Add ginger and garlic and cook until fragrant. Stir in the rest of the vegetables and cook for 5 minutes. Pour in the sauces and coriander. Serve with a squeeze of fresh lime juice.
