All the magical flavours of Easter in this one serve. 🐣Vic’s Hotcross Bun Muffin🐰
The one featured in my photo is using quinoa flakes, but for your convenience and different tastes I’ve included 3 versions.

This was excellent and it could be my new favourite 🤭. Not that I’ve said that before! I’ll be making this all year round for sure.
What you need.
🔸️13g or 2tbsp quinoa flakes or 22g rolled oats. @harrywaysnz or 15g @freshlife coconut flour
🔸️2 tbsp @cyclops_yoghurt 99% Fat Free Greek yoghurt.
🔸️1 tbsp sugar free maple syrup @sukrinaus
🔸️1 medium egg.
🔸️1 tsb freshly squeezed orange juice and a couple of tsp of zest.
🔸️9g of glace mixed peel.
🔸️¼ tsp mixed spice.
🔸️8g @freshlife Sultanas *gifted
🔸️½ tsp ground ginger.
🔸️pinch of freshly grated nutmeg.
For the cross.
🔸️I used 1 tsp of gluten free flour mixed into a paste with a little water.
What to do.
Preheat the air fryer or oven to 180°. Combine all the dry ingredients together in a small bowl. Add the remaining ingredients and combine well. Pour into a tuna tin (180g), which is the perfect size, or simply use a ramekin or mug. Carefully pour the flour paste on top of the batter to make a cross. Bake for 18-20 minutes. It’s cooked when a skewer comes out clean.
I prefer baking mine as I like the crispy edges. But here is an alternative cooking method: 🔶️ Rinse out a cup, mug or ramekin with water to prevent sticking. Follow the above steps with the mixture and microwave for 2 minutes (depending on your microwave). It’s cooked when a skewer comes out clean.
