4 sleeps 🎅 
This has the magical flavours of Christmas in the one serve The last one of the year. I started this over 6 months ago, can you believe it? I’ve thoroughly enjoyed sharing them all with you, but for now it will be on hold. Maybe I’ll do it once a month instead. What do you think?

🎄 Vics Christmas ‘Pudding’ Muffin 🎄

This was excellent and it could be my new favourite 🤭 Not that I’ve said that before! I’ll be making this all year round for sure.

What you need.
🔸️22g rolled oats. @harrawaysnz are my favourite. 
🔸️2 tbsp 99% Fat Free Greek yoghurt. @cyclops_yoghurt
🔸️1 tbsp warm water.
🔸️1 medium egg.
🔸️1 tbsp sugar free maple syrup or substitute sugar. 
🔸️3 medjool fresh dates, pitted and chopped. 
🔸️2 tsp reshly grated orange zest. Alternatively ¼ tsp orange essence. 
🔸️½ tsp brandy essence. 
🔸️9g of glace mixed peel.
🔸️½ tsp mixed spice.
🔸️½ tsp ground ginger. 

Topping. 
🔸️½ a serve of my white chocolate sauce

What to do.
Preheat the air fryer or oven to 180°. Combine all the dry ingredients together in a small bowl. Add the remaining ingredients and combine well. Pour into a tuna tin (180g), which is the perfect size, or simply use a ramekin or mug. Bake for 18-20 minutes (will take longer in the oven). It’s cooked when a skewer comes out clean. 

I prefer baking mine, I like the crispy edges. But alternatively you can cook in the microwave for 2 minutes.

Before serving pour on some of my chocolate sauce 😋  and a few chopped 
pistachios.
