♡Vic’s Cheesy Coleslaw Frittata♡ Makes 8.

Just pulled these little lovelies out of the oven 😋😋. They’re so tasty and quick to whip up. I’ve been making them nearly every week for years now, but this is the first time using leftover coleslaw mix.
You can use any veg that you have on hand as this is a perfect opportunity to use leftovers too. A scrumptious breakfast, lunch or snack and I’m sure the kids will love them, too😊.
What you need.
🔸️½ a bag 225g coleslaw mix without the dressing.
🔸️2 tbsp arrowroot or cornflour.
🔸️1 tsp garlic powder.
🔸️½ tsp mustard powder.
🔸️8 light laughing cow triangles.
🔸️Seasoning to taste. I use garlic salt and lemon pepper.
Toppings (optional). Add the extra smart points. I used a sprinkle of poppy seeds*, pumpkin seeds*.
What to do.
Preheat the oven to 200°. With an electric whisk, beat the eggs, cornflour, garlic, mustard powder and seasonings until light and fluffy. Stir in the coleslaw mix and pour evenly into baking pans. Place a cheese triangle into the middle of each portion and press down slightly. Add sprinkle of seeds, if using. Bake for 35 minutes until golden brown.
I used my triangle silicon pans (purchased from @Amazon) 🔶️ these are one of my favourites and there is no need to spray them! Use what you have.
