An experiment that turned out perfectly, but this doesn’t happen all the time believe me. It’s a vegetarian version of my ham butty Absolutely scrumptious if you like beetroot!!
What you need.
🔸️3 tbsp @harrawaysnz rolled oats *
🔸️2 tbsp 99% fat free Greek yoghurt. I used @cyclops_yoghurt
🔸️1 tbsp warm water.
🔸️1 medium egg.
🔸️Seasoning to taste, I use ¼ tsp lemon pepper and garlic salt as always.
🔸️1 tsp of freshly chopped parsley or any herbs of your choice.
🔸️3 beetroot slices fresh or tinned and drained.
🔸️1 Lite Laughing Cow triangle.
Instructions (air fryer/oven )
Preheat the air fryer/oven to 180°C. Combine all the dry ingredients together in a small bowl. Add the egg, water and yoghurt until thoroughly combined. Spray a small tuna tin (recycled 180g tin is the perfect size for this) or a ramekin.
Pour half the mixture in the bottom, cover with the beetroot followed by the cheese then the remaining mixture and sprinkle with mixed seeds (optional ). Bake for 25 minutes or when a skewer comes out clean. Times may vary.
Instructions (microwave )
If you’re short on time try this method. Rinse out a cup, mug or ramekin with water to prevent sticking. Follow the above steps with the mixture and microwave for 2 minutes (depending on your microwave). It’s cooked when a skewer comes out clean.
