♡Dave’s Mediterranean Chicken Meatballs♡   Serves 4, two balls per serve. 💚3 💙2 💜2.

Dave is my husband🥰 . I’m so lucky because he’s a very good cook. Anyway, he created this dish and I just had to share it immediately! It really is that AMAZING!
These chicken balls are filled with salty feta and cooked in a rich, garlicy, tomato sauce infused with oregano and capers.

For the balls. 
🔸️2 large (400g) chicken breasts, processed to make mince.
🔸️1 slice of wholemeal bread made into bread crumbs.
🔸️½ large onion finely diced. He used my @wwaunz mini food processor (he loves it)
🔸️2 tsp dried oregano.
🔸️1 heaped tsp of minced garlic. 
🔸️Seasoning to taste. He recommends using lemon pepper and garlic salt 😆
🔸️100g of reduced fat feta cut into 8 cubes.
🔸️2 tbsp of plain flour. 

For the sauce.
🔸️1 large red onion finely diced.
🔸️2 tsp of minced garlic. 
🔸️700g passata.
🔸️2 tsp each of dried oregano and smoked paprika. 
🔸️1 tbsp each of tomato puree and ketchup. 
🔸️3 tbsp capers.
🔸️¼ tsp of baking soda. This gets rid of the acidity from the tomatoes

What to do.
With your hands (or gloves), combine all the ingredients for the balls, except the feta. With an icecream scoop divide the mixture into 8. Roll each ball with one piece of feta in flour and refrigerate for 20-25 minutes.
In a large pan, fry the onions and garlic for a few minutes, stir in the remaining ingredients, lastly add the baking soda. Bring to the boil and simmer. In another pan, lightly fry the balls until just golden, then add them to the sauce and simmer gently for 25-30 minutes. Serve with zoodles and a sprinkling of parmesan.
