My Magic Pot’ (slow cooker) has been busy again making another one of my favourite curries. So simple and very tasty! ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Probably the healthiest curry you’ll ever have. Apart from my Chicken Rogan Josh 😆 The depth of flavours make your taste buds dance! Amend the spices to suit your own taste. Curries don’t have to be hot, just flavoursome. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
What you need.⠀⠀⠀⠀⠀⠀⠀⠀⠀
🔸️2 large chicken breasts, I used frozen, Yes! No defrosting needed! 🔸️2 large onions chopped. 🔸️1 tin of chopped tomatoes.🔸️3 fresh chopped tomatoes.🔸️2 tsp ground garam masala.🔸️2 tsp ground cardamom.🔸️2 tsp ground turmeric. 🔸️2 tsp ground cumin.🔸️¼ tsp ground cloves.🔸️1 tbsp of ground ginger. 🔸️4 cloves of chopped garlic.🔸️1-2 chopped fresh red chilli.🔸️8 whole black peppercorns roughly chopped. 🔸️1 bunch of roughly chopped coriander 🔶️🔸️500g bag of frozen spinach, defrosted and processed to form a puree. I used a can of this, bought from my local Indian spice shop (Zero sp, easier if you can find it)🔸️1 tsp salt. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
What to do.⠀⠀⠀⠀⠀⠀⠀⠀⠀
Preheat your slow cooker to high or low. Place everything in the pot except the coriander and fresh tomatoes. Give it a good stir, place on the lid. Leave and let all the flavours infuse. Cook on low 8 hours/ high 4 hours.⠀⠀⠀⠀⠀⠀⠀⠀⠀
30 minutes before serving, take the chicken out and shred with 2 forks. Place back into the ‘magic pot’ and cover with the sauce. Stir in the fresh tomatoes and coriander (save some for decorating) 10 minutes before serving.⠀⠀⠀⠀⠀⠀⠀⠀⠀
