♡ Vic’s Coconut Shortbreads ♡ 
Perfect for ‘MOTHER’S DAY’. The taste will take you back to your childhood. 
Remember the ‘coconut haystacks’, one of the first recipes that I made with my mum using an egg cup? Well these remind me so much of those. 
 
Melt in your mouth, soft and crumbly, ‘HEALTHY’ coconut shortbread, for a fraction of the smart points.
 
Super easy, 3 ingredient recipe which took me less than 20 minutes to make and bake, from start to finish.

What you need.
🔸️100g substitute sugar*
🔸️60g coconut flour*
🔸️70g low fat spread. I used Flora Light. Amend the smart points accordingly.
 
What to do.
Preheat your oven to 160° NOT FAN. Prepare you baking pans. I used flower shaped silicon moulds, 1½ Inch diameter.
With an electric whisk, beat the margarine and sugar together until creamy and lighter in colour.  Add the coconut flour and 1 tbsp of water and combine until it just comes together.

Place tablespoons of the mixture into your moulds and press down lightly. Bake for 12 minutes. Leave in the mould for 5-10 minutes before very gently easing them out with care. 
They will become harder as they cool. Store in an airtight container (not in the fridge) for up to 10 days.
I got 16 for 1 sp.
