♡ V I C’ S  B R E A D  F O R  O N E ♡ with gherkins (pickles) and a mug of warming soup.

The Tomato and Veg soup was lovingly made by my mum 🥰. The bread is made in my usual way with some gherkins added.

What you need.
🔸️22g @harrawaysnz rolled oats 
🔸️2 tbsp 99% fat free Greek yoghurt. I used @cyclops_yoghurt
🔸️1 tbsp warm water.
🔸️1 medium egg.
🔸️Seasoning to taste.
 
What to do.
Instructions (air fryer/oven )
Preheat the air fryer/oven to 180°C. Combine all the dry ingredients together in a small bowl. Add the egg, water and yoghurt until thoroughly combined. Spray a small tuna tin (recycled 180g tin is the perfect size for this, and never sticks) or a ramekin. 

Pour all the mixture into the tin, add a few pieces of gherkin. Sprinkle with seeds and my everything seasoning  ( optional ). Bake for 25 minutes or when a skewer comes out clean. Times may vary.

Instructions (microwave )
If you’re short on time try this method. Rinse out a cup, mug or ramekin with water to prevent sticking. Follow the above steps with the mixture and microwave for 2 minutes (depending on your microwave). It’s cooked when a skewer comes out clean.
